The natural sugars from ripe bananas and baked sweet potato create a crumb that is tender, fragrant, and just sweet enough.   • 1 cup mashed baked sweet potato (about 1 medium)
  • 2 ripe bananas, mashed
  • 2 eggs
  • ⅓ cup (80 ml) melted butter or oil
  • ½ cup (100 g) brown sugar or honey
  • 1½ cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • Optional: ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the sweet potato and bananas together until mostly smooth.
  3. Whisk in the eggs, melted butter, and sugar.
  4. Mix the flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet until just combined. Stir in the walnuts if using.
  6. Pour into the pan and bake for 55-60 minutes, until a toothpick comes out clean.
  7. Cool for 15 minutes before slicing.

Notes

  • Do not overmix the batter; fold gently until just combined to avoid a dense, gummy texture.
  • Use very ripe bananas with plenty of brown spots for maximum natural sweetness and moisture.
  • Bake the sweet potato rather than boiling for drier, more concentrated flavor; let cool completely before mashing.
  • Start testing for doneness at the 55-minute mark with a toothpick; a few moist crumbs are okay.
  • Cool for 15 minutes before slicing to allow the crumb to set and prevent crumbling.
