Strawberry Avocado Farro Salad

- 2 cups fresh strawberries, sliced
- 1 large ripe avocado, diced
- 2 cups baby spinach

- Salt and black pepper to taste
- 1/4 cup sliced almonds
Instructions
- Bring a large pot of salted water to a boil and cook farro for 20-25 minutes until tender but chewy.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Drain and cool the farro slightly.
- In a large mixing bowl, combine the farro, spinach, strawberries, and avocado.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with sliced almonds and serve.
Notes
- Toast almonds for 2 minutes to enhance flavor.
