A vibrant and refreshing grain salad combining chewy farro, sweet strawberries, and creamy avocado in a tangy balsamic dressing.

Ingredients

  • 1 cup dry farro
  • 2 cups fresh strawberries, sliced
  • 1 large ripe avocado, diced
  • 2 cups baby spinach
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and black pepper to taste
  • 1/4 cup sliced almonds

Instructions

  1. Bring a large pot of salted water to a boil and cook farro for 20-25 minutes until tender but chewy.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Drain and cool the farro slightly.
  4. In a large mixing bowl, combine the farro, spinach, strawberries, and avocado.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Top with sliced almonds and serve.

Notes

  • Toast almonds for 2 minutes to enhance flavor.
  • Add avocado at the very end to prevent it from mashing.
  • For a gluten-free version, substitute farro with quinoa.
