Shimmering “Poison” Candy Apples transform ordinary fruit into bewitching confections that look dangerous but taste absolutely divine. These glossy black treats capture the imagination with their metallic sheen and crisp sugar shell that shatters with each bite.

Ingredients

  • Fresh Apples: 6 medium Granny Smith apples (chilled, stems removed, thoroughly washed and dried)
  • Sugar Base: 400 g (2 cups) granulated white sugar
  • Glucose / Corn Syrup: 180 ml (3/4 cup) light corn syrup
  • Liquid: 120 ml (1/2 cup) water
  • Coloring: 1 tsp black gel food coloring + a drop of deep emerald green gel
  • Shimmer: 1 tsp edible luster dust (silver, pearl, or metallic teal-green)
  • Hardware: 6 sturdy wooden craft sticks or cleaned rustic twig skewers

Instructions

  1. Prep the Apples: Wash the apples under warm running water with a mild scrub to remove any grocery store wax coating, then dry them completely. Push a sturdy skewer or rustic branch stick deeply into the stem end of each apple. Line a baking sheet with parchment paper and lightly spray with neutral oil.
  2. Combine Sugar Base: In a medium, heavy-bottomed saucepan, whisk together the granulated sugar, light corn syrup, and water until uniform. Insert a reliable candy thermometer into the liquid without touching the pot bottom.
  3. Boil to Hard-Crack: Place over medium-high heat without stirring. Bring the syrup to a rapid boil until the candy thermometer registers exactly 149°C to 150°C (300°F to 302°F) (the hard-crack stage).
  4. Color & Swirl: Immediately remove the saucepan from the heat. Carefully swirl in the black/emerald gel food coloring and the edible luster dust until fully blended into a swirling, metallic, potion-like liquid. Let the bubbles subside for 30–45 seconds so the surface turns mirror-smooth.
  5. Dip & Coat: Tilt the pot slightly, grab an apple by its stick, and submerge it into the hot sugar syrup, rotating once in a fluid 360° motion to coat entirely. Lift, let excess syrup run off for 3 seconds, and set right-side-up onto the greased parchment paper.
  6. Cool & Serve: Allow the candy shell to cool and set completely at room temperature for 10–15 minutes until brittle and glassy before slicing or serving.

  • Scrub apples with warm water to remove wax coatings that prevent sugar adhesion
  • Work quickly once you reach the hard-crack stage, as the syrup begins setting rapidly within seconds
