  • 1½ lb (680 g) boneless, skinless chicken breasts, cut into bite-size pieces
  • ½ cup (115 g) unsalted butter, melted
  • 5 cloves garlic, finely minced
  • ½ cup (50 g) grated Parmesan cheese
  • 1½ cups (150 g) shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-size pieces and arrange them closely together in a lightly greased baking dish.
  3. In a small bowl, combine the melted butter, minced garlic, Parmesan, Italian seasoning, salt, and black pepper.
  4. Pour the garlic-butter mixture evenly over the chicken, making sure each piece is coated.
  5. Sprinkle the shredded mozzarella evenly over the top.
  6. Bake for about 30 minutes, until the chicken is cooked through and the cheese is melted, bubbling, and golden in spots.
  7. Sprinkle with fresh parsley.
  8. Serve hot and pull the chicken pieces apart to reveal the juicy, cheesy center.
