Peanut butter stuffed brookie cups are the ultimate dessert mashup, featuring a fudgy brownie base, a hidden peanut butter center, a soft cookie layer, and a candy topping.

  • ½ cup (115 g) butter, melted
  • ¾ cup (150 g) sugar
  • 1 egg
  • 1 tsp vanilla
  • ⅓ cup (35 g) cocoa powder
  • ⅓ cup (45 g) flour
  • ¼ tsp salt
  • Peanut butter cookie layer
  • ¼ cup (60 g) butter, softened
  • ¼ cup (65 g) peanut butter
  • ½ cup (100 g) brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup (125 g) flour
  • ½ tsp baking soda
  • ½ cup (85 g) chocolate chips
  • Filling and topping
  • ⅓ cup (85 g) peanut butter
  • 3 tbsp powdered sugar
  • 12 mini peanut butter cups, unwrapped
  • Flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Brownie: Whisk butter and sugar, then add the egg and vanilla. Fold in cocoa, flour and salt.
  3. Press 1½ tbsp brownie batter into each cup.
  4. Filling: Mix peanut butter and powdered sugar until smooth and thick. Roll into 12 balls.
  5. Cookie: Cream butter, peanut butter and brown sugar. Add the egg and vanilla, then fold in flour, baking soda and chocolate chips.
  6. Place a peanut butter ball on each brownie base and wrap a scoop of cookie dough around it to seal.
  7. Bake 18–20 minutes until the edges are golden.
  8. Immediately press a mini peanut butter cup into the top of each one.
  9. Cool 10 minutes in the pan, then finish with sea salt.

Notes

  • Do not overmix the brownie batter once flour is added to maintain a fudgy texture.
  • Use a cookie scoop to portion dough evenly for consistent baking.
  • Chill peanut butter filling balls briefly if they become too soft to handle.
  • Press mini peanut butter cups into warm brookies immediately after baking so they adhere.
  • Remove cups from the oven when centers still look slightly underdone to avoid overbaking.
  • Thoroughly grease the muffin tin or use paper liners to prevent sticking.
  • Wait the full 10 minutes before removing from the pan so the structure sets.
  • Ensure the cookie dough completely covers the filling during assembly to prevent sinking.
