Parmesan Italian Chicken Thighs bring together a crackling cheese crust and juicy meat for a simple, comforting weeknight dinner.

  • 6 boneless, skinless chicken thighs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup Italian dressing
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons extra grated Parmesan for topping

Instructions

  1. Preheat the oven to 200°C / 400°F.
  2. Pat the chicken thighs dry with paper towels and arrange them in a lightly greased baking dish.
  3. In a bowl, combine the Italian dressing, olive oil, Parmesan cheese, Italian seasoning, garlic powder, paprika, salt, and black pepper.
  4. Coat each chicken thigh generously with the Parmesan Italian dressing mixture.
  5. Sprinkle the remaining Parmesan cheese over the top of the chicken.
  6. Roast for about 30–35 minutes, or until the chicken is cooked through and the Parmesan coating is golden and crisp.
  7. For a more deeply browned crust, briefly broil/grill for 2–3 minutes, watching closely.
  8. Let the chicken rest for a few minutes, then garnish with fresh chopped parsley and extra Parmesan.
  9. Serve hot while the Parmesan crust is crispy and the chicken remains juicy.

Notes

  • Pat the chicken completely dry before coating so the Parmesan mixture clings instead of sliding off.
  • Arrange the thighs with a little room between them to let hot air circulate and turn the cheese crisp rather than steamed.
  • Reserve the extra grated Parmesan for the very end so it melts gently over the hot chicken without scorching.
  • Watch the broiler closely during the final minutes, because Parmesan can shift from golden to burnt in under sixty seconds.
