No-Bake Baileys Cheesecake
A velvety, indulgent no-bake cheesecake infused with the smooth flavor of Irish cream liqueur and set on a crunchy chocolate cookie crust.

- 300g Chocolate sandwich cookies
- 80g Unsalted butter, melted
- 500g Full-fat cream cheese, softened
- 120g Powdered sugar
- 150ml Irish cream liqueur
- 300ml Heavy whipping cream
- 1 tsp Vanilla extract
Instructions
- Crush the chocolate cookies into fine crumbs and mix with melted butter.
- Press the cookie mixture into the bottom of a 9-inch springform pan and chill while preparing the filling.
- In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
- Slowly stir in the Irish cream liqueur and vanilla extract.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour the filling over the crust, smooth the top, and refrigerate for at least 6 hours or overnight.
Notes
- Always use full-fat cream cheese for a proper set.
- Ensure the heavy cream is very cold before whipping.
- Run a warm knife around the edge of the pan for a clean release.
