A velvety, indulgent no-bake cheesecake infused with the smooth flavor of Irish cream liqueur and set on a crunchy chocolate cookie crust.

Ingredients

  • 300g Chocolate sandwich cookies
  • 80g Unsalted butter, melted
  • 500g Full-fat cream cheese, softened
  • 120g Powdered sugar
  • 150ml Irish cream liqueur
  • 300ml Heavy whipping cream
  • 1 tsp Vanilla extract

Instructions

  1. Crush the chocolate cookies into fine crumbs and mix with melted butter.
  2. Press the cookie mixture into the bottom of a 9-inch springform pan and chill while preparing the filling.
  3. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  4. Slowly stir in the Irish cream liqueur and vanilla extract.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  7. Pour the filling over the crust, smooth the top, and refrigerate for at least 6 hours or overnight.

Notes

  • Always use full-fat cream cheese for a proper set.
  • Ensure the heavy cream is very cold before whipping.
  • Run a warm knife around the edge of the pan for a clean release.
