Mini Pancake Dessert transforms your typical breakfast into a whimsical, bite-sized celebration. These tiny silver-dollar pancakes pile high into a bowl like your favorite cereal, creating a canvas for endless toppings.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • 1 egg
  • 2 tbsp melted butter
  • ½ tsp vanilla extract

Instructions

  1. Whisk flour, sugar, baking powder, and salt in a bowl.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients until just mixed (small lumps are fine).
  4. Heat a non-stick pan over medium-low heat, lightly greased.
  5. Using a squeeze bottle or piping bag, pipe silver-dollar-sized pancakes onto the pan.
  6. Cook 30–45 sec per side until golden and bubbles form.
  7. Pile the mini pancakes into a bowl like cereal.
  8. Top with maple syrup, whipped cream, fresh berries, and a dusting of powdered sugar.

Notes

  • Do not overmix the batter; small lumps are crucial for tender pancakes.
  • Use medium-low heat to prevent burning before centers cook through.
  • Use a squeeze bottle or piping bag for consistent silver-dollar sizing.
  • Wait for bubbles to form on the surface before flipping.
