  • 1 1/2 lb (680 g) potatoes, peeled and cubed
  • 3 tbsp butter
  • 1/4 cup milk, warmed
  • Salt and black pepper, to taste
  • 1/4 cup grated cheddar cheese (optional)

Instructions

  1. Prepare the potatoes: Boil the potatoes in salted water for 15–20 minutes, or until fork-tender. Drain well.
  2. Make the mash: Mash the potatoes with butter, warm milk, salt, and pepper until smooth. Stir in the cheddar if desired.
  3. Cook the beef: Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
  4. Add the vegetables: Stir in the onion, carrot, and garlic. Cook for 4–5 minutes until softened.
  5. Build the gravy: Mix in the tomato paste and flour. Gradually add the beef broth and Worcestershire sauce. Add thyme, salt, and pepper. Simmer for 8–10 minutes until thickened, then stir in the peas.
  6. Fill the ramekins: Divide the beef mixture among individual oven-safe ramekins.
  7. Add the topping: Spoon the mashed potatoes over the filling and spread to the edges. Use a fork to create ridges that will turn golden in the oven.
  8. Bake: Place the ramekins on a baking tray and bake at 400°F (200°C) for 20–25 minutes, until bubbling and golden. Broil briefly if needed for extra browning.
  9. Serve: Let cool for a few minutes, garnish with parsley if desired, and serve warm.
