Ingredients
Scale
4 boneless, skinless chicken breasts
1/2 cup Italian dressing
3 tablespoons honey
1/2 cup sun-dried tomatoes, chopped
3 garlic cloves, finely minced
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon chopped fresh parsley, for garnish
Instructions
Preheat the oven to 200°C (400°F).
Add the Italian dressing, honey, chopped sun-dried tomatoes, minced garlic, Italian seasoning, paprika, salt, and black pepper to a bowl. Whisk until well combined.
Place the chicken breasts in the marinade and turn them until completely coated.
Transfer the chicken to a lightly oiled baking dish or parchment-lined baking sheet. Pour the remaining marinade over the chicken.
Bake for about 25–30 minutes, or until the chicken is fully cooked and the surface is golden and caramelized.
Let the chicken rest for a few minutes so the juices redistribute.
Garnish with fresh parsley and a few extra chopped sun-dried tomatoes.
Slice one chicken breast to reveal the juicy interior and spoon some of the glossy honey-tomato dressing over the top before serving.
Notes
Let chicken come to room temperature for 15 minutes before baking for even heat penetration.
Position the baking dish in the upper third of the oven to maximize caramelization.
If sun-dried tomatoes are very dry, soak them in warm water before chopping.
Pat chicken dry before marinating if it seems excessively wet from packaging.
Start checking internal temperature at 22 minutes and remove promptly at 74°C (165°F).
Do not skip the resting step after baking; cutting too soon lets juices escape.
Avoid high-sided baking dishes that trap steam and prevent browning.
