Fluffy American Pancakes are the ultimate morning comfort food, with golden edges and cloud-like centers that practically melt on your tongue.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 3 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract
  • Butter, for serving
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  2. In a separate bowl, combine the flour, sugar, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients and whisk gently until just combined. A few small lumps are perfectly fine—do not overmix.
  4. Let the batter rest for about 5 minutes so it can thicken slightly.
  5. Cook the pancakes until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
  6. Stack the pancakes and top with a pat of butter.
  7. Drizzle generously with maple syrup and serve warm.

Notes

  • Do not overmix; gluten development leads to chewy instead of tender pancakes.
  • Let the batter rest the full five minutes so the baking powder activates fully.
  • Use a light hand when flipping to avoid deflating precious air bubbles.
  • Keep your griddle at medium heat to prevent raw centers or burnt edges.
  • Room-temperature milk and egg blend more smoothly with melted butter.
