Double Chocolate Brookie Cups are the ultimate treat featuring a rich, fudgy brownie center wrapped in a soft, chewy chocolate cookie shell.

Ingredients

Scale
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips
  • ½ cup chocolate chunks or chopped dark chocolate
  • ½ cup brownie batter or prepared brownie mixture

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin pan.
  2. Whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the softened butter with the granulated and brown sugars until creamy.
  4. Mix in the egg and vanilla until smooth.
  5. Gradually add the dry ingredients and mix until a soft chocolate cookie dough forms.
  6. Fold in the chocolate chips.
  7. Press a portion of the cookie dough into each muffin cup, creating a small cup shape.
  8. Add a spoonful of brownie batter or chocolate brownie mixture into the center.
  9. Top with additional cookie dough and chocolate chunks.
  10. Bake until the edges are set and the centers remain fudgy.
  11. Let the brookie cups cool slightly before removing them from the pan.
  12. Serve warm for the ultimate soft, gooey double-chocolate center.

Notes

  • Don’t overmix the dough once dry ingredients are added; mix just until combined to keep the cookie base tender
  • Underbake slightly; pull from the oven when edges are set but centers still jiggle
  • Use a light hand when greasing the pan to avoid residue on edges
  • Let the cups cool slightly before removing to help them hold their shape
  • Ensure butter is softened to room temperature for proper creaming
