Spooky cheesecake brownies are the ultimate Halloween treat that combines rich chocolate fudginess with tangy cream cheese swirls.

Ingredients

Scale
  • 150 g melted butter
  • 200 g dark chocolate, chopped
  • 30 g dark cocoa powder
  • 200 g sugar
  • 3 eggs
  • 90 g flour
  • 1 pinch salt
  • 200 g cream cheese
  • 60 g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 50 g dark chocolate, melted (for the web drizzle)

Instructions

  1. Melt the butter, stir in the chopped dark chocolate until smooth and glossy.
  2. Whisk in the dark cocoa powder and sugar.
  3. Crack in the 3 eggs, whisk to combine.
  4. Sift in the flour and salt, fold gently until just combined — don’t overmix.
  5. In a separate bowl, beat the cream cheese, sugar, egg and vanilla until silky.
  6. Pour the brownie batter into a lined square pan.
  7. Dollop the cheesecake mixture on top, then drag a toothpick through both to create a black-and-white marbled swirl.
  8. Bake at 180°C for 25 minutes, until set with a slight jiggle in the center.
  9. Cool completely, then lift out and slice into squares.
  10. Melt the extra dark chocolate, pipe it in a spiral over each square and drag a toothpick outward from the center to create a spiderweb pattern.
  11. Plate and serve.

Notes

  • Don’t Overmix the Batter: Fold the flour until just combined to maintain fudgy texture.
  • Room Temperature Dairy: Let the cream cheese sit out for thirty minutes before beating to prevent lumps.
  • The Jiggle Test: Remove the pan when the center still wobbles slightly to avoid overbaking.
  • Clean Cuts: Chill the brownies before slicing for the neatest squares.
  • Piping Precision: Use a small round tip or snipped bag corner for thin web lines.
