- 150 g melted butter
- 200 g dark chocolate, chopped
- 30 g dark cocoa powder
- 200 g sugar
- 3 eggs
- 90 g flour
- 1 pinch salt
- 200 g cream cheese
- 60 g sugar
- 1 egg
- 1 tsp vanilla extract
- 50 g dark chocolate, melted (for the web drizzle)
- Melt the butter, stir in the chopped dark chocolate until smooth and glossy.
- Whisk in the dark cocoa powder and sugar.
- Crack in the 3 eggs, whisk to combine.
- Sift in the flour and salt, fold gently until just combined — don’t overmix.
- In a separate bowl, beat the cream cheese, sugar, egg and vanilla until silky.
- Pour the brownie batter into a lined square pan.
- Dollop the cheesecake mixture on top, then drag a toothpick through both to create a black-and-white marbled swirl.
- Bake at 180°C for 25 minutes, until set with a slight jiggle in the center.
- Cool completely, then lift out and slice into squares.
- Melt the extra dark chocolate, pipe it in a spiral over each square and drag a toothpick outward from the center to create a spiderweb pattern.
- Plate and serve.
Notes
- Don’t Overmix the Batter: Fold the flour until just combined to maintain fudgy texture.
- Room Temperature Dairy: Let the cream cheese sit out for thirty minutes before beating to prevent lumps.
- The Jiggle Test: Remove the pan when the center still wobbles slightly to avoid overbaking.
- Clean Cuts: Chill the brownies before slicing for the neatest squares.
- Piping Precision: Use a small round tip or snipped bag corner for thin web lines.
