Crispy Golden Bites represent the perfect marriage of creamy shrimp filling and shatteringly crisp coating that makes every bite a celebration of texture and flavor.

  • 1 lb (450 g) peeled, deveined shrimp, finely chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 3/4 cup milk
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • For the coating
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • Vegetable oil, for frying
  • For serving
  • Lemon wedges
  • Garlic mayonnaise or your favorite dipping sauce

Instructions

  1. Cook the shrimp: Melt the butter in a skillet over medium heat. Add the onion and cook until softened. Add the garlic and chopped shrimp, then cook until the shrimp are just opaque.
  2. Make the creamy filling: Sprinkle in 2 tablespoons of flour and stir for 1 minute. Gradually pour in the milk, stirring until a thick mixture forms.
  3. Season: Add parsley, paprika, salt, and pepper. Stir well and remove from the heat.
  4. Chill: Transfer the mixture to a shallow dish, let it cool, then refrigerate for 1–2 hours until firm enough to shape.
  5. Shape the bites: Form the chilled mixture into small balls or oval croquettes.
  6. Prepare the coating: Place the flour, beaten eggs, and panko breadcrumbs in three separate bowls.
  7. Bread the croquettes: Roll each piece in flour, dip it in egg, then coat thoroughly with breadcrumbs.
  8. Fry until golden: Heat oil to 350°F (175°C). Fry the croquettes in small batches for about 3–4 minutes, until crisp and golden and the centers are hot. Drain on a wire rack or paper towels.
  9. Serve: Garnish with parsley and serve immediately with lemon wedges and dipping sauce.

  • Drain on a wire rack rather than paper towels to prevent soggy coating.
