Crispy Chicken Cheese Rolls are the ultimate comfort food hack for anyone craving a crunchy, cheesy bite without a long wait. Golden breadcrumbs give way to tender spiced chicken and molten mozzarella in every mouthful.

Ingredients

  • 4 large flour tortillas (wraps) 300 g (approx. 10.5 oz) cooked
  • spiced chicken breast
  • cut into small cubes (seasoned with paprika, curry powder, or fajita spices) 150 g (approx. 1.5 cups) shredded mozzarella cheese (or melty string cheese) 2 large eggs
  • whisked 100 g (approx. 1 cup) fine breadcrumbs 2 tbsp cooking oil for pan-searing

Instructions

  1. Fill: Lay a tortilla flat on a clean surface. Spoon a generous portion of spiced chicken into the center and top with shredded mozzarella. Roll: Fold both outer edges inward over the filling
  2. then tightly roll the tortilla forward into a compact
  3. sealed cylinder. Coat: Dip the rolled tortilla into the whisked eggs until completely covered
  4. then roll it in the breadcrumbs until evenly coated on all sides. Crisp: Heat the oil in a skillet over medium heat. Place the rolls seam-side down and cook for 2 to 3 minutes per side
  5. turning occasionally
  6. until the crust is golden-brown and crispy and the cheese is fully melted. Serve: Remove from the heat
  7. slice or pull apart in half to show the melted cheese pull
  8. and serve immediately while hot.

Notes

  • Place rolls seam-side down in hot oil to seal immediately and prevent popping open.
