Sticky, sweet, and smoky cola ribs braised in Coca-Cola and finished with a glossy barbecue glaze for fall-off-the-bone tenderness.

  • 3–4 lb pork ribs
  • 2 cups Coca-Cola
  • 1 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 300°F (150°C). Remove the membrane from the back of the ribs and pat them dry.
  2. Rub the ribs with olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika.
  3. Place the ribs in a baking dish and pour in 1 cup of Coca-Cola around the meat.
  4. Cover tightly with foil and bake for 2 1/2–3 hours, until the meat is tender.
  5. Meanwhile, combine the remaining Coca-Cola, barbecue sauce, brown sugar, Worcestershire sauce, and mustard in a saucepan.
  6. Simmer the sauce over medium-low heat until reduced and glossy, stirring regularly.
  7. Carefully uncover the ribs and brush generously with the cola barbecue glaze.
  8. Broil for 3–5 minutes, watching closely, until the glaze bubbles and caramelizes. Alternatively, finish on a hot grill.
  9. Rest briefly, brush with any remaining glaze, and serve warm.

Notes

  • Remove the silver skin membrane from the back of the rack before cooking.
  • Pat meat completely dry before applying oil and spice rub.
  • Keep foil sealed tight during baking to trap steam.
  • Watch saucepan closely when reducing glaze to prevent burning.
  • Stay near broiler and rotate pan for even caramelization.
