Rich and chewy peanut butter blondies with caramelized brown sugar and melted semi-sweet chocolate chips in every bite.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup creamy peanut butter
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth.
  3. Add the egg, vanilla extract, and creamy peanut butter, whisking until fully combined.
  4. Fold in the flour, baking powder, and salt until just incorporated.
  5. Stir in the chocolate chips.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick comes out with just a few moist crumbs.
  8. Let cool completely in the pan before cutting into squares.

Notes

  • Use room temperature eggs for smooth emulsification.
  • Do not overmix after adding flour to maintain a chewy texture.
  • Avoid overbaking; a toothpick should come out with moist crumbs, not clean.
  • Use conventional processed peanut butter, not natural style, for consistent texture.
  • Let blondies cool completely before cutting to prevent crumbling.
