Chocolate Icebox Cake is the ultimate no-bake dessert that transforms simple pantry staples into a luscious, cloud-like treat. Each slice reveals layers of tender chocolate cream and softened crackers that melt on your tongue.

Ingredients

  • 2½ cups cold heavy whipping cream
  • ⅓ cup powdered sugar
  • ¼ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 18-20 chocolate graham cracker sheets (or about 9 oz chocolate wafers)
  • Chocolate shavings or chocolate sauce for topping

Instructions

  1. Whip the cream, powdered sugar, cocoa, vanilla and salt to stiff peaks.
  2. Spread a thin layer of the cream in an 8×8-inch dish.
  3. Add a single layer of graham crackers, breaking them to fit.
  4. Spread about ⅓ of the remaining cream over the crackers.
  5. Repeat the layers, finishing with a thick layer of cream.
  6. Cover and chill for at least 6 hours or overnight, so the crackers soften into cake.
  7. Top with chocolate shavings or sauce, then slice and serve cold.

Notes

  • Start with truly cold heavy whipping cream for best results.
  • Use a light hand when beating in cocoa and sugar to avoid deflating the cream.
  • Tap the dish gently after each cracker layer to remove air pockets.
  • Chill overnight rather than minimum 6 hours for cleanest slices.
  • Place mixing bowl and beaters in freezer for 10 minutes before beginning if kitchen is warm.
  • Do not overwhip cream or it will become grainy.
