Rich, fudgy chocolate brownies with a glossy crackly top and dense, gooey center made from simple pantry staples.

Ingredients

Scale
  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup (85g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup (175g) chocolate chunks or chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
  2. Whisk melted butter and sugar together until glossy.
  3. Add eggs one at a time, then stir in vanilla.
  4. Sift in cocoa powder, flour, salt, and baking powder; fold until just combined.
  5. Fold in chocolate chunks, reserving a handful for the top.
  6. Pour batter into the pan, smooth the top, and scatter reserved chocolate chunks.
  7. Bake 25–30 minutes, until a toothpick comes out with moist crumbs.
  8. Cool completely before slicing for clean, fudgy squares.

Notes

  • Don’t overmix once you add the flour to avoid a tough, cakey texture.
  • Use room temperature eggs for a smoother emulsion and crackly top.
  • Underbake slightly because brownies continue cooking from residual heat.
  • Line the pan with parchment paper overhangs for easy lifting and clean edges.
  • Cool completely before slicing to prevent crumbling and ensure clean edges.
  • Use a light-colored metal pan instead of glass.
