Chicken Fajita Quesadillas bring together sizzling fajitas and golden, melty quesadillas in one irresistible handheld meal with seasoned chicken, charred peppers, and gooey cheese.

Ingredients

  • Flour Tortillas: 4 to 6 large tortillas Chicken: 400g chicken breasts
  • thinly sliced and tossed in fajita seasoning Bell Peppers: 1 red bell pepper and 1 green bell pepper
  • sliced into thin strips Onion: 1 medium yellow onion
  • thinly slicedCheese: 250g shredded cheese blend (Monterey Jack, cheddar, or mozzarella for the best cheese pull) Cooking Fat: 1 to 2 tablespoons butter or neutral oil for griddling Optional Garnishes: Fresh cilantro

Instructions

  1. Cook the Fajita Filling: Heat a skillet over medium-high heat with a splash of oil. Add the sliced seasoned chicken strips
