A rich, velvety, and plant-based dressing featuring the creamy texture of soaked cashews, a savory nutritional yeast ‘cheese’ flavor, and a zesty kick from fresh jalapeños.

  • 1 cup (150 grams) raw cashews, soaked and rinsed
  • 1 to 2 fresh jalapeños, roughly chopped (seeds optional for heat)
  • 3 tablespoons nutritional yeast
  • 2 tablespoons fresh lime juice
  • 1 clove garlic
  • 1/2 cup to 3/4 cup water (adjust for desired thickness)
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon turmeric

Instructions

  1. Place the raw cashews in a bowl, cover with water, and soak for at least 4 hours or overnight; drain and rinse thoroughly.
  2. In a high-speed blender, combine the soaked cashews, chopped jalapeño, nutritional yeast, lime juice, garlic, vinegar, salt, and turmeric.
  3. Add 1/2 cup of fresh water to the blender canister.
  4. Blend on high speed for 1-2 minutes until the dressing is completely smooth and creamy.
  5. Check the consistency; if it is too thick, add more water one tablespoon at a time and pulse until it reaches your preference.
  6. Taste and adjust seasoning with extra lime juice or salt if necessary.
  7. Pour into a glass jar and refrigerate for at least 30 minutes before serving.

  • Soaking cashews is essential for a smooth texture; use hot water for 20 minutes if you are short on time.
  • Adjust the heat by removing the seeds and white ribs from the jalapeño for a milder flavor.
  • The dressing will thicken as it chills; whisk in a tiny bit of water to thin it out if needed.
