A bright and elegant pasta dish featuring a silky lemon butter sauce, fresh garlic, and salty Parmesan cheese.

Ingredients

  • 1 pound Spaghetti or Linguine
  • 2 large Fresh Lemons (zest and juice)
  • 4 tablespoons Unsalted Butter
  • 2 tablespoons Extra Virgin Olive Oil
  • 0.75 cup Parmesan Cheese, finely grated
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.25 cup Fresh Parsley, chopped

Instructions

  1. Boil pasta in a large pot of salted water until al dente.
  2. Reserve 1 cup of pasta water before draining the noodles.
  3. In a large skillet, melt butter with olive oil over low heat and sauté garlic for 1 minute.
  4. Add the cooked pasta to the skillet along with lemon juice and 1/2 cup of pasta water.
  5. Toss vigorously over low heat to emulsify the sauce.
  6. Remove from heat and stir in lemon zest, Parmesan, and parsley.
  7. Add more pasta water if needed for a glossy finish and serve immediately.

Notes

  • Zest the lemons directly over the pan to catch all the aromatic oils.
  • Always use fresh lemons rather than bottled juice for the best flavor.
  • Adding cheese off the heat ensures a smooth, non-clumpy sauce.
