1 ½ cups graham cracker crumbs
¼ cup unsalted butter, melted
24 oz cream cheese, softened
8 oz white chocolate, melted and cooled slightly
¾ cup granulated sugar
½ cup sour cream
2 teaspoons vanilla extract
3 large eggs
2 cups fresh strawberries, sliced
½ cup strawberry jam
1 tablespoon cornstarch (optional)
Instructions
Preheat oven to 325°F (163°C). Wrap springform pan in foil and grease lightly.
Mix graham crumbs and melted butter. Press into pan and bake 10 minutes. Let cool.
Beat cream cheese and sugar until smooth. Add white chocolate, sour cream, and vanilla. Beat in eggs one at a time.
Place pan in roasting pan and add hot water halfway up the sides.
Pour filling into crust. Smooth the top and bake 60–70 minutes. Let cool in oven with door ajar for 1 hour.
Chill at least 8 hours. Before serving, top with sliced strawberries and brush with warm jam.
Slice with a hot knife and serve chilled.
