This White Bean & Smoked Sausage Skillet is a one-pan comfort food wonder, combining creamy beans, savory sausage, fresh greens, and crispy croutons in a rich, garlicky broth. Ready in under 30 minutes!

Ingredients

  • 14 oz smoked sausage (beef or turkey), sliced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 3 cups fresh spinach or kale
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon Dijon mustard
  • 1/4 cup heavy cream (optional)
  • Salt and black pepper, to taste
  • 1 cup croutons, for garnish
  • Fresh parsley or thyme, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown sausage slices for 5–7 minutes. Remove and set aside.
  2. Add diced onion to the same skillet and sauté 3–4 minutes until soft. Stir in garlic and cook 30 seconds more.
  3. Add white beans, broth, mustard, and cream (if using). Simmer for 5 minutes, stirring occasionally.
  4. Stir in spinach and cook until just wilted. Return sausage to skillet and toss everything together.
  5. Season with salt and pepper. Garnish with croutons and herbs just before serving.
  6. Serve hot in shallow bowls with extra bread if desired.

Notes

  • For extra richness, finish with a pat of butter or sprinkle of parmesan.
  • Use turkey or chicken sausage for a lighter option.
  • Add a pinch of chili flakes for heat.
