A hearty and comforting Italian-inspired dish made with tender chicken thighs simmered in a rich tomato sauce with peppers, onions, and garlic. Perfect for a cozy weekday dinner.

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 4 garlic cloves, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup dry white wine
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet or Dutch oven over medium-high heat and add olive oil.
  2. Season chicken thighs with salt and pepper, then sear until golden brown on both sides. Remove and set aside.
  3. In the same pan, sauté onion and bell peppers until softened. Add garlic and cook until fragrant.
  4. Stir in tomato paste and cook for a minute. Deglaze with white wine, scraping up browned bits.
  5. Add crushed tomatoes and Italian seasoning. Return chicken to pan, skin side up.
  6. Simmer uncovered for 30–35 minutes until chicken is fully cooked and sauce thickens.
  7. Taste and adjust seasoning. Add a pinch of sugar if sauce is too acidic.
  8. Serve hot over pasta, polenta, or rice, garnished with herbs and Parmesan.

  • Simmer uncovered to reduce and thicken the sauce.
