A hearty and comforting vegetarian chili made with tender sweet potatoes, beans, vegetables, and warm spices simmered in a rich tomato base, perfect for cozy dinners and make ahead meals.

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 1 large red bell pepper, diced
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned kidney beans, drained and rinsed
  • 2 cups canned diced tomatoes
  • 1½ cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons sliced green onions
  • 1 ripe avocado, diced

Instructions

  1. Heat a large pot over medium heat and add olive oil.
  2. Add the diced onion and minced garlic, then sauté until softened and fragrant.
  3. Stir in the diced sweet potato and red bell pepper, cooking for about 5 minutes.
  4. Add the black beans, kidney beans, diced tomatoes, and vegetable broth.
  5. Season with chili powder, ground cumin, paprika, salt, and black pepper.
  6. Bring to a gentle simmer and cook uncovered for 35 minutes, stirring occasionally, until the sweet potatoes are tender and the chili thickens.
  7. Taste and adjust seasoning if needed.
  8. Ladle into bowls and top with green onions and diced avocado before serving.
