Delicious vegan millionaire’s bars featuring a crunchy oat base, creamy plant-based caramel layer, and rich chocolate topping. Perfect for a sweet plant-based indulgence.

Ingredients

  • Rolled Oats: 1 1/2 cups, forms the crunchy base
  • All-Purpose Flour: 1/2 cup, binds oat base
  • Coconut Oil: 1/3 cup, adds richness to the base
  • Maple Syrup: 1/3 cup, sweetens and helps bind the base
  • Coconut Milk: 1/2 cup, for the caramel layer’s creaminess
  • Brown Sugar: 1/2 cup, adds sweetness and depth to caramel
  • Vegan Butter: 1/4 cup, enhances caramel richness
  • Vanilla Extract: 1 teaspoon, flavor enhancer for caramel
  • Dark Chocolate: 1 cup, melted for the top layer

Instructions

  1. Preheat oven to 350°F (175°C) and line a square baking pan with parchment paper
  2. Mix oats, flour, coconut oil, and maple syrup for the base and press evenly into the pan, bake 12-15 minutes until lightly golden
  3. Prepare caramel by heating coconut milk, brown sugar, vegan butter, and vanilla in a saucepan until thickened. Pour over baked base
  4. Allow caramel to cool slightly, then spread melted dark chocolate on top
  5. Refrigerate for at least 1 hour to set
  6. Cut into squares and serve or store in an airtight container
