Elegant and romantic French macarons in shades of pink and red, filled with a silky white chocolate ganache. These delicate treats are the perfect homemade gift for Valentine’s Day.

Ingredients

  • 125 grams Almond Flour, superfine blanched
  • 150 grams Powdered Sugar
  • 100 grams Egg Whites, room temperature
  • 50 grams Granulated Sugar
  • 100 grams White Chocolate, chopped
  • 50 milliliters Heavy Cream
  • 1 small Vanilla Bean, scraped
  • 2 drops Pink or Red Gel Food Coloring
  • 1 pinch Salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with silicone mats.
  2. Sift the almond flour and powdered sugar together twice to ensure a smooth texture.
  3. Whisk egg whites and salt in a stand mixer until frothy, then gradually add granulated sugar until stiff peaks form.
  4. Fold in the gel coloring during the final seconds of whisking the meringue.
  5. Gently fold the dry ingredients into the meringue using a spatula until the batter reaches a lava-like consistency.
  6. Pipe the batter into circles or heart shapes on the prepared mats.
  7. Tap the trays firmly on the counter to remove air bubbles and let rest for 30-60 minutes until dry to the touch.
  8. Bake for 14-16 minutes, then let cool completely on the mats.
  9. Heat heavy cream and vanilla bean, then pour over the white chocolate and stir until smooth to make the ganache.
  10. Once the ganache has cooled and thickened, pipe onto a shell and sandwich with another.

Notes

  • Use a kitchen scale for the most accurate results.
  • Avoid liquid food coloring as it ruins the batter consistency.
  • Allow the macarons to ‘mature’ in the fridge for 24 hours for the best texture.
