  • 2 tablespoons milk or cream
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1 tablespoon chopped fresh dill or parsley
  • Pinch of red chili flakes (optional)

Instructions

  1. Heat a nonstick skillet over low heat and add olive oil or butter.
  2. In a bowl, whisk eggs with milk, turmeric, salt, and black pepper until well combined.
  3. Pour egg mixture into the skillet. Let sit for a few seconds, then stir gently with a rubber spatula.
  4. Continue stirring slowly until soft curds form. Remove from heat while still glossy and slightly underdone.
  5. Sprinkle with herbs and chili flakes if using. Serve immediately on toast or a plate.
