  • 34 large tortillas (10-inch)
  • 6 large eggs
  • 1 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1/2 cup diced bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly oil a pie dish or oven-safe skillet.
  2. In a bowl, whisk eggs, milk, salt, and pepper until well combined.
  3. Sauté spinach, bell pepper, and cherry tomatoes in olive oil for 2–3 minutes. Let cool slightly.
  4. Layer tortillas in the dish to form a crust, overlapping as needed. Brush lightly with olive oil and bake for 5–7 minutes.
  5. Spread sautéed vegetables over the tortillas. Pour egg mixture over top and sprinkle with cheese.
  6. Bake for 30–35 minutes until center is set and top is golden.
  7. Let rest for 10 minutes before slicing and serving warm.
