This Tomato Balsamic Chicken is a quick, elegant dinner featuring juicy chicken breasts glazed with a rich, tangy balsamic reduction and bursting cherry tomatoes. A comforting yet elevated meal that’s perfect for weeknights or dinner parties.

Ingredients

  • 2 Boneless Chicken Breasts, halved
  • 2 cups Cherry Tomatoes
  • 1/3 cup Balsamic Vinegar
  • 1 tablespoon Honey
  • 3 Garlic Cloves, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Fresh Basil or Parsley, for garnish (optional)

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Season chicken with salt and pepper. In a small bowl, mix balsamic vinegar and honey.
  3. Add olive oil to the hot skillet and swirl to coat.
  4. Sear chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  5. In the same skillet, add garlic and cherry tomatoes. Sauté for 2-3 minutes until tomatoes begin to blister.
  6. Pour in the balsamic-honey mix and simmer for 3-5 minutes until thickened into a glaze.
  7. Return chicken to the skillet and coat with the glaze. Cook 1 more minute.
  8. Garnish with fresh herbs and serve hot.

Notes

  • Use a lid briefly if tomatoes need help bursting.
  • Butter can be added at the end for a richer glaze.
  • Add chili flakes for a spicy twist.
