A thick and chewy cookie bar infused with fresh orange zest and packed with chunks of the iconic Terry’s Chocolate Orange segments.
- 1 cup Unsalted Butter, softened
- 3/4 cup Granulated Sugar
- 1 cup Light Brown Sugar, packed
- 2 Large Eggs, room temperature
- 2 teaspoons Vanilla Extract
- 1 tablespoon Fresh Orange Zest
- 2 1/4 cups All Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 2 Terry’s Chocolate Oranges, chopped
- Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, brown sugar, and orange zest until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a thick dough forms.
- Gently fold in about three-quarters of the chopped chocolate orange pieces.
- Press the dough evenly into the prepared baking pan.
- Scatter the remaining chocolate pieces over the top.
- Bake for 20-25 minutes until the edges are golden brown and the center is set.
- Cool completely in the pan before lifting out and slicing into squares.
Notes
- Rubbing the orange zest into the sugar before creaming helps release the fragrant oils.
- Do not overbake; the bars should still be slightly soft in the middle when removed from the oven.
- Whacking the chocolate orange before unwrapping makes it much easier to chop into segments.
