A thick and chewy cookie bar infused with fresh orange zest and packed with chunks of the iconic Terry’s Chocolate Orange segments.

  • 1 cup Unsalted Butter, softened
  • 3/4 cup Granulated Sugar
  • 1 cup Light Brown Sugar, packed
  • 2 Large Eggs, room temperature
  • 2 teaspoons Vanilla Extract
  • 1 tablespoon Fresh Orange Zest
  • 2 1/4 cups All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 Terry’s Chocolate Oranges, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, brown sugar, and orange zest until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until a thick dough forms.
  6. Gently fold in about three-quarters of the chopped chocolate orange pieces.
  7. Press the dough evenly into the prepared baking pan.
  8. Scatter the remaining chocolate pieces over the top.
  9. Bake for 20-25 minutes until the edges are golden brown and the center is set.
  10. Cool completely in the pan before lifting out and slicing into squares.

Notes

  • Rubbing the orange zest into the sugar before creaming helps release the fragrant oils.
  • Do not overbake; the bars should still be slightly soft in the middle when removed from the oven.
  • Whacking the chocolate orange before unwrapping makes it much easier to chop into segments.
