Sweet Potato Sugar Cookie Delight is a comforting, layered dessert that combines a buttery sugar cookie crust with spiced sweet potato filling and fluffy whipped topping. Perfect for holidays or everyday indulgence.

  • 2 cups mashed sweet potatoes
  • 1 pouch (17.5 ounces) sugar cookie mix
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 container (8 ounces) whipped topping

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Mix sugar cookie mix with melted butter until dough forms.
  3. Press dough evenly into baking dish to form crust.
  4. In a separate bowl, beat sweet potatoes, cream cheese, brown sugar, cinnamon, nutmeg, vanilla, and heavy cream until smooth.
  5. Spread sweet potato filling over crust evenly.
  6. Bake for 25–30 minutes until set, then let cool completely.
  7. Chill in refrigerator for at least 4 hours or overnight.
  8. Spread whipped topping over chilled dessert and optionally garnish with cinnamon or crushed pecans.
  9. Slice and serve cold.
