Ingredients

  • Sweet Potatoes: 3 large (about 2 1/2 pounds), roasted and mashed
  • Brown Sugar: 3/4 cup
  • Granulated Sugar: 1/2 cup
  • Butter: 6 tablespoons, melted
  • Vanilla Extract: 1 tablespoon
  • Cinnamon: 1 1/2 teaspoons
  • Nutmeg: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Eggs: 2 large, beaten
  • Milk: 1/2 cup
  • All-Purpose Flour: 1 1/2 cups
  • Baking Powder: 2 teaspoons
  • Cold Butter: 1/2 cup (1 stick), diced
  • Sugar (for topping): 2 tablespoons
  • Heavy Cream or Milk: 1/2 cup

Instructions

  1. Preheat Your Equipment: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. Combine Ingredients: In a large bowl, mash roasted sweet potatoes until smooth. Stir in brown sugar, granulated sugar, melted butter, vanilla extract, cinnamon, nutmeg, salt, beaten eggs, and milk. Mix until everything is fully combined.
  3. Prepare Your Cooking Vessel: Pour the sweet potato filling into the prepared baking dish and smooth the top with a spatula.
  4. Assemble the Dish: In a separate bowl, combine flour, baking powder, and a pinch of salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in heavy cream or milk just until a soft dough forms.
  5. Cook to Perfection: Drop spoonfuls of the dough over the sweet potato filling, leaving some space for spreading. Sprinkle with 2 tablespoons of sugar. Bake for 40–45 minutes, or until the topping is golden brown and a toothpick comes out clean.
  6. Finishing Touches: Let cool slightly before serving. This allows the filling to settle and the flavors to meld.
  7. Serve and Enjoy: Scoop into bowls and serve warm—preferably with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • Roast sweet potatoes for deeper flavor.
  • Use cold butter for a tender cobbler crust.
  • Let the cobbler rest before serving for best texture.
  • Top with nuts or marshmallows for extra flair.
