  • 1 cup mashed sweet potato (roasted or steamed)
  • 1/2 cup almond butter (or any nut butter)
  • 1/3 cup maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup oat flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/3 cup chocolate chips (plus more for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine mashed sweet potato, almond butter, maple syrup, and vanilla until smooth.
  3. In a separate bowl, mix cocoa powder, oat flour, baking soda, and salt. Add to the wet mixture and stir to combine.
  4. Fold in chocolate chips, then pour the batter into the prepared pan and smooth the top.
  5. Sprinkle additional chocolate chips on top and bake for 25–28 minutes until edges are set and center is soft.
  6. Cool completely before slicing for best texture.
