These Sweet Enough Scones are perfectly golden, lightly sweet, and bursting with juicy berries. With a tender crumb and crisp edges, they’re ideal for breakfast, brunch, or an anytime treat.

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1 cup fresh or frozen berries
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Turbinado or coarse sugar for topping (optional)

Instructions

  1. Preheat Your Equipment: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt. Add cubed butter and cut into dry mixture until it resembles coarse crumbs.
  3. Prepare Your Cooking Vessel: Keep your lined baking sheet ready for transferring scone wedges.
  4. Assemble the Dish: Fold in berries gently. Mix cream and vanilla separately, then stir into the dry mix just until a shaggy dough forms.
  5. Cook to Perfection: Pat dough into a 1-inch thick circle and cut into 6–8 wedges. Transfer to baking sheet, sprinkle tops with coarse sugar, and bake for 18–22 minutes until golden.
