Sticky Toffee Pudding is a rich, indulgent British dessert with a soft, spongy texture and gooey toffee sauce. Perfect for any occasion, it’s warm, comforting, and irresistible.

Ingredients

  • Flour: 1 ½ cups – Provides the structure for the pudding.
  • Baking powder: 1 tsp – Helps the pudding rise and become fluffy.
  • Brown sugar: 1 cup – Adds sweetness and moisture to the pudding.
  • Butter: ½ cup – Creates a rich, tender texture.
  • Eggs: 2 large – Bind the ingredients and help with texture.
  • Dates: 1 cup – Pitted, chopped dates for that signature chewy texture.
  • Milk: 1 cup – Moistens the batter and keeps the pudding soft.
  • Vanilla extract: 1 tsp – For extra flavor depth.
  • Salt: A pinch – Balances the sweetness of the dessert.

Instructions

  1. Preheat Your Equipment: Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Combine Ingredients: In a mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, followed by the milk and vanilla extract. Mix in the chopped dates.
  3. Prepare Your Cooking Vessel: Pour the pudding batter into your greased baking dish, smoothing it out with a spatula.
  4. Assemble the Dish: Ensure the pudding is evenly spread across the dish to ensure it bakes uniformly.
  5. Cook to Perfection: Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean from the center of the pudding.
  6. Finishing Touches: While the pudding is baking, prepare the toffee sauce by melting butter and brown sugar in a small saucepan over medium heat. Stir in heavy cream and bring to a simmer, then cook for about 5 minutes until it thickens slightly.
  7. Serve and Enjoy: Once the pudding is baked, pour the warm toffee sauce over the top and let it soak in. Serve with a scoop of vanilla ice cream or whipped cream.

Notes

  • Be sure to pour the toffee sauce over the pudding right after baking so it can soak in and keep the cake moist.
  • If you prefer a more decadent dessert, add a scoop of vanilla ice cream or a dollop of whipped cream on top before serving.
  • You can also make individual portions of this dessert by baking in smaller ramekins.
