A rich, warm baked dessert with a soft, fudgy chocolate base and tender pears baked right into the surface, finished with delicate almond flakes for texture.

  • 150 g dark chocolate
  • 120 g unsalted butter
  • 120 g caster sugar
  • 3 large eggs
  • 100 g all purpose flour
  • 30 g cocoa powder
  • 1 teaspoon baking powder
  • 3 medium pears, peeled and sliced
  • 30 g flaked almonds

Instructions

  1. Preheat the oven to 180°C and lightly grease a ceramic baking dish.
  2. Melt the dark chocolate and butter together until smooth, then pour into a mixing bowl.
  3. Whisk in the caster sugar until fully combined.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Sift in the flour, cocoa powder, and baking powder, then gently fold until just combined.
  6. Pour the batter into the prepared baking dish and smooth the surface.
  7. Arrange the pear slices evenly over the top and sprinkle with flaked almonds.
  8. Bake for 30 to 35 minutes until the edges are set and the center remains soft.
  9. Allow to cool slightly before serving warm.

Notes

  • Use ripe but firm pears so they soften without breaking down completely.
  • Avoid overbaking to keep the pudding squidgy in the center.
