These spicy Italian breakfast roll ups are filled with savory chicken or beef sausage, fluffy scrambled eggs, and melty cheese — all rolled in a tortilla and baked to golden perfection.

  • 6 small (6-inch) flour tortillas
  • 1/2 pound Italian chicken or beef sausage, cooked and crumbled
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil or butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, cook sausage until browned. Set aside.
  3. In a bowl, whisk eggs with salt, pepper, and red pepper flakes. Scramble lightly in the skillet until just set.
  4. Warm tortillas for 10–15 seconds to make them flexible.
  5. Place sausage, eggs, and cheese on each tortilla. Roll tightly and place seam side down on the baking sheet.
  6. Brush tops with oil or melted butter.
  7. Bake for 12–15 minutes, or until golden brown and crispy.
  8. Cool slightly before serving. Serve with dipping sauce if desired.
