Fluffy, buttery dinner rolls enriched with sour cream and fresh chives, baked to golden perfection in a cast iron skillet. A quick, flavorful twist on classic comfort bread.

Ingredients

  • All-Purpose Flour: 3 cups (provides structure and light chew)
  • Baking Powder: 1 tablespoon (helps create lift and rise without yeast)
  • Baking Soda: 1/2 teaspoon (works with sour cream to tenderize)
  • Salt: 1 teaspoon (balances and enhances flavors)
  • Granulated Sugar: 1 tablespoon (adds a hint of sweetness)
  • Sour Cream: 1 1/2 cups (the secret to moist, tangy rolls)
  • Egg: 1 large (binds and enriches the dough)
  • Fresh Chives: 1/4 cup, finely chopped (adds savory, oniony brightness)
  • Unsalted Butter: 4 tablespoons, melted (brushed on top for a golden finish)

Instructions

  1. Preheat Your Equipment: Preheat your oven to 375°F (190°C). Grease your cast iron skillet generously with butter or non-stick spray.
  2. Combine Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar. In another bowl, mix sour cream, egg, and chopped chives. Add wet to dry ingredients and stir until just combined.
  3. Prepare Your Cooking Vessel: Using floured hands, gently form 10–12 equal-sized dough balls and arrange them in the skillet, spacing slightly apart.
  4. Assemble the Dish: Let the formed rolls rest for 10–15 minutes at room temperature. Brush the tops with half the melted butter.
  5. Cook to Perfection: Bake in the preheated oven for 25–28 minutes, or until tops are golden and a toothpick comes out clean.
  6. Finishing Touches: Immediately brush with the remaining butter once out of the oven. Sprinkle with a pinch of sea salt if desired.
  7. Serve and Enjoy: Serve warm right out of the skillet. They’re irresistible with butter, soup, or just as they are.

Notes

  • Use full-fat sour cream for best results.
  • Don’t overmix the dough to keep the rolls tender.
  • Let the dough rest before baking for better rise and texture.
  • Brush with garlic butter or sprinkle with seasoning for extra flavor.
