These S’mores Cookie Bars bring all the campfire flavor without the fire. Gooey marshmallows, melty milk chocolate, and a buttery graham cracker cookie base come together in one delicious, easy-to-make dessert.

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup graham cracker crumbs
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup milk chocolate chips
  • 1½ cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy. Mix in the egg and vanilla extract.
  3. In a separate bowl, whisk together flour, graham cracker crumbs, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until combined.
  5. Press about two-thirds of the dough evenly into the prepared pan.
  6. Sprinkle chocolate chips over the dough, then add an even layer of mini marshmallows.
  7. Drop spoonfuls of the remaining dough on top and gently spread to mostly cover the marshmallows.
  8. Bake for 22–25 minutes or until lightly golden. The center should still be soft.
  9. Let the bars cool completely before lifting out of the pan and slicing into squares.

Notes

  • Let bars cool completely for clean slices.
  • Use a plastic knife or greased blade to prevent sticking when cutting.
  • To enhance the toasted flavor, broil for 1-2 minutes at the end of baking (watch closely).
