2 large Turkey Legs
1 Garlic Bulb, halved crosswise
3 sprigs Fresh Rosemary
4–5 sprigs Fresh Thyme
2 Bay Leaves
¼ cup Olive Oil
1 ½ teaspoons Salt
½ teaspoon Black Pepper
Instructions
Preheat oven to 300°F (150°C).
Rub turkey legs with salt and pepper. Place in a roasting pan or Dutch oven.
Add garlic bulb, rosemary, thyme, and bay leaves around the turkey. Drizzle with olive oil.
Cover with foil or lid and roast for 2 hours.
Remove cover, spoon pan juices over meat, and increase oven to 375°F (190°C). Roast uncovered for 30–40 minutes until skin is golden and crisp.
Let rest 10 minutes, then serve with pan juices and roasted garlic.
Notes
Use a meat thermometer to check doneness — it should reach 165°F near the bone.
Resting the meat before serving helps keep it juicy.
Save leftover pan juices for gravy or dipping bread.
