A hearty and comforting Slow-Cooker Meatball Stew made with tender homemade meatballs, rich tomato broth, and hearty vegetables. Perfect for cozy dinners and make-ahead meals.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 large carrots, sliced
  • 2 medium potatoes, diced

Instructions

  1. Turn your skillet to medium heat.
  2. In a large bowl, mix ground beef, breadcrumbs, milk, egg, Italian seasoning, salt, pepper, and garlic. Form into 1-inch meatballs.
  3. Lightly grease your slow cooker and have it ready.
  4. Brown the meatballs in a skillet until golden. Place them in the slow cooker. Add onions, carrots, and potatoes. Pour in diced tomatoes and season again if needed.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  6. Adjust seasonings and garnish with parsley or cheese if desired.
  7. Serve hot with crusty bread or over rice.

  • Use lean beef to avoid excess grease.
  • Form and refrigerate meatballs ahead of time for quick prep.
