Tender chicken simmered in a creamy lemon herb sauce made right in the slow cooker. It’s rich, zesty, and perfect for weeknights or dinner parties.

Ingredients

  • 4 boneless skinless chicken thighs or breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 45 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 3/4 cup heavy cream
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet and sear chicken on both sides until golden brown. Set aside.
  3. In the same skillet, sauté garlic and onions until soft. Add chicken broth and deglaze the pan, scraping up any browned bits.
  4. Pour the onion mixture into the slow cooker. Add lemon juice, zest, thyme, and rosemary.
  5. Place the seared chicken into the slow cooker and cover.
  6. Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  7. Stir in the heavy cream during the last 15 minutes of cooking. If thicker sauce is desired, mix in the cornstarch slurry and let it simmer until slightly thickened.
  8. Serve with sauce spooned over the top and garnish with fresh herbs.

Notes

  • Searing the chicken first adds rich flavor and texture.
  • Add the cream at the end to prevent curdling.
  • Adjust lemon to taste depending on your preferred level of brightness.
