Sheet Pan Huevos Rancheros is a flavorful, easy-to-make breakfast dish with crispy tortilla chips, spicy salsa, runny eggs, and fresh toppings like avocado and cilantro. It’s the perfect dish for brunch or a quick family-style meal.

Ingredients

  • Tortilla chips: 4 cups – The crunchy base for the dish.
  • Salsa roja: 1 cup – A rich, spicy sauce that covers the chips.
  • Shredded cheddar cheese: 1 cup – Melts beautifully on top of the eggs.
  • Eggs: 6 large – The main protein, with perfectly runny yolks.
  • Jalapeños: 1-2, sliced – Adds heat and flavor.
  • Avocado: 1, diced – For a creamy, fresh topping.
  • Cilantro: 1/4 cup, chopped – For garnish and added flavor.
  • Feta cheese: 1/4 cup – Optional, for a tangy finish.

Instructions

  1. Preheat Your Equipment: Preheat your oven to 375°F (190°C). Line a large sheet pan with parchment paper or a silicone baking mat.
  2. Combine Ingredients: Spread the tortilla chips evenly on the sheet pan. Pour the salsa over the chips, making sure to cover them evenly.
  3. Prepare Your Cooking Vessel: Make small wells in the salsa for the eggs to sit in. Crack an egg into each well.
  4. Assemble the Dish: Sprinkle the shredded cheddar cheese over the top of the salsa and tortilla chips. Add the sliced jalapeños for heat.
  5. Cook to Perfection: Bake for 10-15 minutes, depending on your preferred egg doneness. The eggs should be set with soft yolks.
  6. Finishing Touches: Once the eggs are cooked to your liking, remove the sheet pan from the oven.
  7. Serve and Enjoy: Top with diced avocado, cilantro, and a sprinkle of feta cheese. Serve with lime wedges for extra flavor.

Notes

  • For a spicier version, add more jalapeños or hot sauce.
  • You can use any type of cheese, such as Monterey Jack or queso fresco.
  • If you prefer firmer yolks, bake the eggs for a few minutes longer.
