Shakshuka

Shakshuka is a Middle Eastern and North African dish featuring poached eggs in a rich, spiced tomato and pepper sauce. Perfect for breakfast, brunch, or dinner with crusty bread.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 45 large eggs
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and bell pepper; sauté until softened.
  2. Stir in garlic and spices; cook for 1 minute.
  3. Add crushed tomatoes, season with salt and pepper, and simmer for 10 minutes to thicken.
  4. Make small wells in the sauce and crack eggs into them.
  5. Cover and cook until eggs are set to your desired doneness.
  6. Garnish with fresh parsley and serve with bread.

Notes

  • Add feta cheese for extra creaminess.
  • Adjust cayenne for spice preference.
