  • 1/2 onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Salt to taste
  • Fresh parsley or dill, chopped (optional, for garnish)

Instructions

  1. In a bowl, whisk together flour, eggs, milk, salt, and 1 tablespoon of oil until smooth. Let the batter rest for 10–15 minutes.
  2. Meanwhile, heat a skillet over medium heat and cook the ground meat until browned. Drain excess fat if necessary.
  3. Add diced onion and garlic to the skillet with the meat and cook until the onions are soft. Season with salt, black pepper, and paprika. Set aside.
  4. Heat a non-stick pan over medium heat and lightly grease with oil. Pour in about 1/4 cup of batter, tilting the pan to coat evenly. Cook until the edges lift and bottom is golden, about 1–2 minutes per side. Repeat with remaining batter.
  5. Spoon 2 tablespoons of the meat mixture onto one side of each pancake, fold in the sides, and roll up like a burrito.
  6. Optional: pan-fry the filled pancakes in a bit of oil for 1–2 minutes per side to crisp them up before serving.
  7. Serve warm, garnished with fresh herbs or a dollop of sour cream if desired.
