Ingredients

Scale
  • 1 pound Italian sausage (casings removed)
  • 10 cups day-old or toasted bread cubes
  • 1 large onion, diced
  • 3 celery stalks, chopped
  • 2 garlic cloves, minced
  • 2 to 2 1/2 cups chicken broth
  • 2 large eggs, beaten
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme, minced
  • 1 tablespoon fresh sage, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Heat oil or butter in a skillet. Sauté onion and celery for 5 minutes, then add garlic for 1 minute.
  3. Add sausage, cook until browned and fully cooked, breaking it up with a spoon. Stir in herbs.
  4. In a large bowl, place bread cubes. Add sausage mixture and toss to combine.
  5. In a separate bowl, whisk eggs with broth, then slowly pour over bread mixture until moistened.
  6. Transfer to baking dish, cover with foil, and bake for 30 minutes.
  7. Uncover and bake an additional 15–20 minutes until golden and crisp on top.
  8. Let rest for 10 minutes before serving.

Notes

  • Use day-old bread or toast it for best texture.
  • Add more broth slowly to avoid sogginess.
  • Mix in diced apples or mushrooms for a variation.
